African Groundnut Stew

- 3 cups of water shopping list
- 1 medium zucchini, chopped shopping list
- 3/4 cup chopped fresh okra shopping list
- 2 sweet potatoes, peeled and chopped shopping list
- 1 onion, sliced shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon black pepper shopping list
- 1 teaspoon ground ginger (or 2 teaspoons of fresh grated) shopping list
- 1/2 cup peanut butter shopping list
- 1/2 teaspoon red pepper flakes shopping list
- 2 tomatoes, diced shopping list
- 1 cup of tomato paste shopping list
- 2 hard boiled eggs, chopped shopping list
- cooked rice shopping list
How to make it
- Simmer the zucchini, okra, sweet potatoes, onion and salt, black pepper and ginger in the water in a large pot until tender. About 10 to 15 minutes.
- Add the peanut butter, pepper flakes, tomatoes, and tomato paste to the mixture.
- Stir well and simmer on low heat for about 15 minutes.
- Serve over cooked rice and top each serving with the cooked eggs.
