How to make it

  • In a large bowl, cream together butter and brown sugar
  • Beat in egg and vanilla
  • Sift together flour, baking soda and salt; gradually stir into butter mixture
  • Fold in sour cream and rhubarb
  • Spoon batter into a greased 9x13 inch glass baking dish
  • Stir together white sugar and nutmeg; sprinkle over batter
  • Bake at 350 degrees for 40 minutes, or until tester comes out clean

    I have made many Rubarb Pies, but never a cake. With the vanilla,nutmeg and brown sugar I know it must be good! High Five!
