Rhubarb Cake

- 1/4 cup butter, softened shopping list
- 1 1/2 cups packed brown sugar shopping list
- 1 egg shopping list
- 1 tablespoon vanilla extract shopping list
- 2 1/3 cups all purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 cup sour cream shopping list
- 4 cups chopped rhubarb shopping list
- 1/3 cup white sugar shopping list
- 1/2 teaspoon ground nutmeg shopping list
How to make it
- In a large bowl, cream together butter and brown sugar
- Beat in egg and vanilla
- Sift together flour, baking soda and salt; gradually stir into butter mixture
- Fold in sour cream and rhubarb
- Spoon batter into a greased 9x13 inch glass baking dish
- Stir together white sugar and nutmeg; sprinkle over batter
- Bake at 350 degrees for 40 minutes, or until tester comes out clean

I have made many Rubarb Pies, but never a cake. With the vanilla,nutmeg and brown sugar I know it must be good! High Five!
