Ingredients
  • 4 tbs olive oil.
  • 1 big aubergine in 2 cm cubes.
  • 2 medium onions chopped.
  • 5 cloves garlic chopped.
  • 2 green peppers cut in thin strips.
  • 1 little hot pepper chopped.
  • 4 tomatoes cut in 2 cm pieces.
  • 1 ts ground currey.
  • 1/4 ts cayenne pepper.
  • 400 gr chick peas.
  • juice of 1 lemon.
  • 2 tbs parsley leaves chopped.
  • 1 tbs celery leaves chopped.
  • salt and pepper to taste.

Directions
  1. Soak chick peas min 8 hours or overnight in luke warm water.
  2. Cook chick peas 30 min in the pressure cooker, take out and let cool down.
  3. Sprinkle aubergines with salt and after 15 min clean of the salt under streaming water, drain and dry on kitchen paper.
  4. Heat 2 tbs oil in a big frying pan and stir / fry the aubergines for 5 min on medium heat, drain on kitchen paper.
  5. Heat the other 2 tbs oil and saute onion, garlic, green peppers and hot pepper for 5 min till soft, add tomatoes, the spices and a little salt stir and cook for 5 min more.
  6. If needed add a little vegetable broth or water add chick peas and cook another 5 min, add lemon juice cook 2 min more, take of the heat add the parsley and celery and mix well let cool down .
  7. Put in the fridge till cold and serve.
