ZUCCHINI QuotMOCK CRAB CAKESquot Recipe
When life hands you an exuberance of zucchini, make them into crispy cakes.

Ingredients
  • 1 egg, lightly beaten
  • 1 1/2 tsp. Old Bay Seasoning
  • 1 Tbsp. onion flakes
  • 2 Tbsp. melted butter
  • 2 1/2 cups grated peeled zucchini, drained or patted dry
  • 1 cup plain breadcrumbs
  • 1/2 cup flour, seasoned with 1/2 tsp of cayenne and 1/4 tsp of salt
  • Oil for frying

Directions
  1. Combine egg, seasoning, onion flakes, butter and zucchini.
  2. Stir in breadcrumbs.
  3. Shape into cakes and roll in seasoned flour.
  4. Fry in a small amount of oil until golden brown on both sides.
  5. Used my cast iron pan, worked well about 1/4 inch film of oil.
  6. Serve with cocktail sauce or tartar sauce if you like.
