  • Preheat over to 350
  • Spray the inside of a 9x13 pan with Pam and set aside
  • In a medium sauce pan over medium heat, cook pork sausage and beef. Drain oil add onion and garlic, stir until translucent. Add pureed tomatoes, bay leaf, red pepper salt and pepper. Let simmer for 30 minutes.
  • While sauce is simmering, cook noodles in olive oil and salt till tender.
  • While both sauce and noodles are cooking prepare filling. Mix cottage cheese, spinach and parmesan cheese. Add beaten egg, salt and pepper.
  • Remove pasta from water and rinse in cool water, lay on a napkin to remove any extra water. Spoon a large amount of filling onto pasta and roll. Pick up pasta roll and lay in the 9x13 pan. Continue with remaining pasta and filling. Pour sauce over pasta. Cover with aluminum foil and place in preheated over and bake for 35 minutes. Remove and top with cheese and basil. Lay a slice of tomato on top of each roll. Return to over and cook uncovered for 15 minutes.
