Hollers Mums Fruit Loaf

- 2 1/2 tbsp canola oil shopping list
- 1/2 cup applesauce shopping list
- 3/4 cup fruit juice or water (I used cranberry-grape cocktail) shopping list
- 2/3 cup brown sugar shopping list
- 4 oz raisins shopping list
- 2 oz dried cranberries shopping list
- 1/2 tbsp pumpkin pie spice shopping list
- 1 tsp vanilla extract shopping list
- 1 over-ripe banana, mashed shopping list
- 1 cup flour shopping list
- 1 cup whole wheat flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/4 tsp salt shopping list
How to make it
- Bring oil, applesauce, water, sugar, raisins, cranberries and spice to a boil in a medium pot.
- Cook, stirring often, 2 minutes, then cool 30-60 minutes.
- Preheat oven to 300F, grease a loaf pan.
- Add vanilla, banana, flours, baking soda, baking powder and salt to the pan mixture and mix gently but thoroughly.
- Bake 1 to 1 1/2 hours or until tests done. Cool 15 minutes in pan, then turn out and cool on wire rack.
