How to make it

  • Pulse the peanuts in a blender or food processor until coarsely chopped, then transfer to a bowl.
  • With the motor running, drop garlic and ginger through the hole and finely chop
  • Add the peanut butter, water, vinegar, soy sauce, sesame oil, sugar, and red pepper flakes and blend until smooth
  • Toss chicken and all vegetables in a large bowl with enough dressing to coat, then sprinkle with chopped peanuts and cilantro
  • Serve with lime wedges

    Am I ever glad you picked up Gourmet this month...AND pre-tested some recipes. Recipes that start with a store-bought rotisserie chicken are some of my favs...what a time saver! I'm picking up a chicken and doing this one this week, hon. Thanks.
