just peachy bread pudding

- 2 1/2 cups of diced peeled peaches (fresh or frozen) shopping list
- 1/4 cup of peach necter shopping list
- 4 slices brioche bread, crusts removed, cut into 1-in cubes (4 cups) shopping list
- 3 tblspn of unsalted butter melted shopping list
- 1/2 cup of goleden raisins shopping list
- 3 large eggs shopping list
- 1/2 cup granulated sugar shopping list
- 1 tsp of ground cinnamon shopping list
- 1 3/4 cups half-and-half shopping list
- 1 tsp vanilla extract shopping list
- brown sugar-vanilla sauce shopping list
- 1/2 cup light brown sugar shopping list
- 2tblspn light corn syrup (recommended:karo) shopping list
- 4tblspn unsalted butter shopping list
- 1/2 heavy cream shopping list
- 1 1/2 tsp vanilla extract shopping list
How to make it
- preheat the oven to 325f. lightly butter a 2 1/2 quart baking dish and set aside
- in a medium saucepan over medium low heat, bring peaches and peach nectar to a simmer. cookuntil peaches are tender, about 5 min
- in a large bowl, gently toss the bread, melted butter, raisins, and peaches until the bread is completely coated. in a seperate large bowl, whisk together the eggs, granulated sugar, cinamon, half and half, and 1 tsp vanilla extract. add the bread mixture and mix gently. pour into prepared dish
- bake until golden brown and center is set, about 1 hr
- in a small saucepan,over medium heat, combine the brown sugar, corn syrup, butter, cream, and vanilla extract. bring to boil, stirring frequently. reduce the heat to medium low and cook for 5 min stirring continually. remove from heat sauce will thicken as it cools. drizzle over the top of bread pudding and serve warm or at room temperature
