This is an easy and delicious way to incorporate salmon into your diet. Prepare the relish in the morning to allow flavors time to marry.

  • Plum-ginger relish:
  • 4 ripe plums, diced
  • 2 Tbl fresh ginger, minced
  • 1/4 c. rice wine vinegar
  • Hoisin Glazed Salmon:
  • 1/4 c. Hoisin sauce
  • 2 tsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp honey
  • 1 tsp fresh garlic, minced
  • 1/2 tsp fresh ginger, minced
  • 4 salmon fillets
  • 2 tsp sesame seeds

Directions
  1. Combine the plums, ginger and rice wine vinegar. Cover and refrigerate at least eight hours.
  2. Preheat oven to 425*. Line a baking sheet with aluminum foil and spray with cooking spray.
  3. Combine Hoisin, soy sauce, sesame oil, honey, garlic and ginger.
  4. Lay salmon, skin side down, on baking sheet and spread half the mixture over fish. Reserve the other half to serve on the side.
  5. Sprinkle fish with sesame seeds, and bake on center rack for 10 minutes per inch thickness. Salmon is ready when it easily flakes with a fork.
  6. Remove salmon from oven. Using a flipper, plate each fillet, leaving the skin on the baking sheet. (Easy clean up .... who doesn't like this?) Garnish with plum-ginger relish and enjoy.

Love Salmon! Added this to my recipes to try. There's a lot of ginger going into this recipe might cut it down a bit because the old man grump is fussy...lol
