Ingredients
  • Dressing
  • 11/2 c packed cilantro
  • 1/2 c extra-virgin olive oil
  • 2 Tbs fresh lime juice
  • 1 tsp fine grated lime zest
  • Kosher salt and fresh ground pepper
  • Salad
  • 4 ears corn,kernals removed(about 3 cups)
  • 11/2 lbs grape tomatoes,halved(about 3 cups)
  • 1 lb fresh mozzarella,diced
  • 2 med. avocados,diced

Directions
  1. Combine dressing ingredients in a blender,using 2 tsp salt,and pepper to taste; process till smooth.
  2. Combine salad ingredients in a large bowl and toss with dressing. Let sit at least 15 mins before serving,or cover and refrigerate up to 4 hours.
