Ingredients
  • 6 cups of shredded lettuce
  • 1 sliced cucumber
  • 6 hard-boiled, chopped eggs
  • 1 large avocado, chopped into small bite size pieces
  • 3 tomatoes, washed and chopped
  • 2 medium sized carrots, shredded
  • 1 small jar of green, pitted olives
  • 18 ounces of salmon, cut into small pieces
  • 1 clove of crushed garlic
  • oil and vinegar
  • salt and pepper

Directions
  1. Season one 18 ounce salmon filet with olive oil, salt, pepper, garlic.
  2. Microwave for approximately 7 minutes. Let stand 1 minute.
  3. While salmon is microwaving, boil eggs and chop vegetables.
  4. Toss everything in a large bowl.
  5. In a separate bowl, mix the salad dressing ingredients.
  6. Toss salad dressing into salad well.
  7. Arrange on a huge platter and serve.
  8. Serves 6.
