Patricks Spanish Dinner Salad

- 6 cups of shredded lettuce shopping list
- 1 sliced cucumber shopping list
- 6 hard-boiled, chopped eggs shopping list
- 1 large avocado, chopped into small bite size pieces shopping list
- 3 tomatoes, washed and chopped shopping list
- 2 medium sized carrots, shredded shopping list
- 1 small jar of green, pitted olives shopping list
- 18 ounces of salmon, cut into small pieces shopping list
- 1 clove of crushed garlic shopping list
- oil and vinegar shopping list
- salt and pepper shopping list
How to make it
- Season one 18 ounce salmon filet with olive oil, salt, pepper, garlic.
- Microwave for approximately 7 minutes. Let stand 1 minute.
- While salmon is microwaving, boil eggs and chop vegetables.
- Toss everything in a large bowl.
- In a separate bowl, mix the salad dressing ingredients.
- Toss salad dressing into salad well.
- Arrange on a huge platter and serve.
- Serves 6.
