Incredible And Easy Berry Terrine Recipe
This is a terrine of fresh berries of your choice in a gelatin you prepare with pomegranate juice. It's from Lori Longbotham's "Luscious Berry Desserts." I was looking for something refreshing to serve yesterday and this was wonderful.

Ingredients
  • 2 cups pomegranate juice (she suggests cranberry-raspberry juice)
  • 2 envelopes plain gelatin
  • 1/2 cup packed light brown sugar
  • 2 Tbsp. fresh lemon juice
  • 5 cups mixed fresh berries (blueberries, raspberries, blackberries... don't use huge strawberries because they won't look dainty and pretty and will make slicing the terrine difficult)
  • whipped cream or creme fraiche to accompany the slices

Directions
  1. Pour 1/2 cup of the juice into a small bowl and sprinkle the gelatin over it. Let this sit for five minutes to soften the gelatin.
  2. Heat the sugar in another 1/2 cup of the juice in a saucepan over a mjedium-high heat. Stir until the sugar dissolves. Remove this from the heat and mix in the lemon juice and gelatin mix. Stir in the last one cup of the juice.
  3. Place the berries in an 8 1/ 2 x 4" laof pan. Pour the liquid over the berries and press them down so they are all below the lip of the loaf pan. Cover this and chill, at least three hours and up to two days.
  4. To serve, run a thin knife blade around the the inside of the loaf pan and then dip the pan in hot water for about five seconds or until the bottom is released. Turn out onto a platter and serve slices.
  5. Serve each guest a slice and pass either freshly whipped cream or creme fraiche to dollop if you'd like.

Does sound luscious! Love pomegranate flavor!


Oh Bori, you're hitting my buttons with this one, and our berries will soon be here, sweet and fresh picked and delicious. I will have to remember to try this - John would even enjoy this one. I have to get some creme fraiche for it - that would be perfect. That cookbook sounds very interesing. I'll have to look for it on Amazon.
