Mediterranean Pasta In Minutes Recipe
This is a recipe I found several years ago on food network by Tyler Florence. It is one of my favorites!

Ingredients
  • 3 T olive oil
  • 1 lb skinless boneless chicken breasts sliced diagonally
  • 1 (8 1/2 ounce) jar sun-dried tomatoes, julienned
  • 2 T garlic minced
  • 1 lb fresh angel hair pasta
  • 1/4 C fresh basil
  • 1 ( 8 1/2 ouce) can artichoke hearts in water quartered and drained
  • 1/2 C kalamata olives pitted
  • 6 oz feta cheese crumbled
  • 1/4 c heavy cream
  • 2 tsp dried oregano
  • salt and pepper to taste

Directions
  1. Boil water for pasta
  2. Heat oil in skillet over Medium heat
  3. brown chicken strips until no longer pink
  4. add sun-dried tomatoesand garlicto skillet
  5. saute for 2 minutes
  6. In the meantime add pasta to boiling water cook to al dente
  7. now add basil, artichokes,olives and feta to skillet.
  8. saute 1 minute then stir in the cream.
  9. strain the pasta and transfer to a large pasta bowl.
  10. Add the chicken mixture and toss
  11. season with oregano and salt and pepper before serving
