SCALLOPS AND MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Simms Estate in Duncanville, Texas in 1987.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves
  • 4 green onions chopped
  • 2/3 pound bay scallops
  • 1/4 pound fresh mushrooms sliced
  • 1/2 teaspoon dried tarragon
  • 1/4 cup dry white wine

Directions
  1. Heat oil in skillet over medium heat then add garlic and green onions and sauté 30 seconds.
  2. Add scallops and mushrooms then sauté 2 minutes stirring constantly.
  3. Add tarragon and wine then turn up heat and cook 2 minutes longer.
