Chicken Curry Asparagus Casserole Recipe
Tweak it and it's a winner. Mom used to make this when I was young. I didn't like it due to the curry. Thankfully, 40 yrs later, I've acquired my "growed up" tastebuds! (mind you the recipe is verbatim from her 3x5 card)

Ingredients
  • 2 Chicken Breasts, Skinned, De-Boned & cut into pieces 2"x3/4"
  • 1 1/2 tsp. MSG
  • 1/4 tsp. Pepper
  • 1/2 cup Corn Oil
  • 2-10 oz. Pkgs. frozen asparagus
  • 1 #10 can Cream chicken soup
  • 1/2 cup Mayonnaise
  • 1 cup Sharp Cheddar cheese
  • 1 tsp. Lemon juice
  • 1/2 tsp. Curry powder

Directions
  1. Preheat oven to 375`
  2. Sprinkle chicken with MSG & pepper
  3. Saute in oil slowly until opaque. (6 mins. or so)
  4. Drain on paper towels.
  5. Cook asparagus as directed and drain.
  6. Line cooked asparagus in bottom of 9x9x2 pan.
  7. Place chicken on top.
  8. Mix soup mayonnaise, lemon juice and curry.
  9. Pour over top and cover with grated cheese.
  10. Cover with foil and bake 30 mins @ 375` or until done.
