How to make it

  • Preheat oven to 425*. Line baking sheet with foil and spray with cooking oil.
  • Finely chop the cashews (a rolling pin works well) and combine with cheese, oil, lemon juice and garlic.
  • Put the fish on the baking sheet and divide the nut topping overtop, pressing it into the fillets to adhere. Bake 10 minutes per inch of thickness.
  • Garnish with fresh dill or basil and lemon wedges. (optional)

    What a great balance and pretty unique sorta idea. Can't get tilapia here but I think Mimpagi (a very mild tasting reef fish) may be okay for this. Thanks for the post. RJ
