Tilapia With Cashew Crust Recipe
The mild taste of tilapia paired with the nutty flavors the cashews offer, and the little zip from the parmesan and lemon make this dish a real pleaser.

Ingredients
  • 1/3 c. chopped toasted cashews
  • 4 Tbl grated Parmesan
  • 1 Tbl olive oil
  • 1 Tbl lemon juice
  • 1/2 tsp crushed fresh garlic
  • 4 tilapia fillets

Directions
  1. Preheat oven to 425*. Line baking sheet with foil and spray with cooking oil.
  2. Finely chop the cashews (a rolling pin works well) and combine with cheese, oil, lemon juice and garlic.
  3. Put the fish on the baking sheet and divide the nut topping overtop, pressing it into the fillets to adhere. Bake 10 minutes per inch of thickness.
  4. Garnish with fresh dill or basil and lemon wedges. (optional)
