Chicken And Spinach Meatloaf Recipe

Ingredients
  • package ground chicken
  • small box frozen spinach, thawed and drained
  • 1/2 purple onion chopped
  • 3-4 garlic cloves chopped
  • palmful of Montreal Steak Seasoning
  • egg
  • breadcrumbs
  • olive oil
  • large palmful of shredded muenster cheese

Directions
  1. In a bowl combine ground chicken, thawed spinach, onion, garlic, steak seasoning, egg, breadcrumbs (to your consistency liking), olive oil (a few drizzles around the bowl), and cheese
  2. Use additional olive oil to prime your meatloaf pan- bottoms and sides so it doesn't stick.
  3. Remove the chicken and spinach mixture from the bowl and place into your baking dish.
  4. Bake at 350 for about an hour or so... more time may be necessary depending on how deep your dish is.
  5. Near the end of the baking, slice a few extra slices of cheese, and place over the top to melt before removing from the oven.
  6. Can be served with a nice spinach salad.

This sounds great, with my wife not eating beef I use Ground Turkey (I actually have a meatloaf in the oven right now). This will definatley be my next meatloaf!!! Thanks, Dooley 5!
