How to make it

  • Clean, wash and finely chop fresh coriander leaves. Reserve two tbsps for garnish. Remove stems, wash and finely chop green chillies.
  • Combine chopped leaves, green chillies, jaggery, salt, soda bicarbonate, turmeric powder, flour and 2 tbsps of oil. Add enough water to make a thick batter. Ensure that the consistency is not thin.
  • Pour the batter onto a greased plate that is atleast one and half inches deep or a tray measuring approx six by six by one and half inches.
  • Steam on high heat for 15 to 20 minutes or till firm and cooked. Cheack by inserting a skewer into the wadi and if it comes out clean, then it is cooked. Remove, cool and cut into 1" sized cubes.
  • Heat sufficient oil in a pan and deep fry the wadis till they are light golden brown in color and crisp. Drain and keep on an absorbent kitchen towel.
  • Serve hot, garnished liberally with chopped coriander leaves.
