How to make it

  • Soak the mushrooms in black tea for about an hour.
  • Heat a frying pan, put olive oil, add sugar and wait till it melts.
  • Then sautee fresh mushrooms, stir and add the soaked porcini. Sprinkle with wine and wait till the alcohol evaporates and the sauce is caramelled (for 10 minutes approximately).
  • Add some butter, and once it melts, salt and pepper the mushrooms.
  • They're ready for serving.
  • Salt and pepper the fillet.
  • Put a second frying pan on the heat and prepare for the next steps. Put some olive oil and sautee the fillet along with marjoram and rosemary on all the sides (about 3 minutes for each side).
  • If you want the meat well-roasted, continue for 3 more minutes. Serve what you've cooked and eat with company.

    Mr Breezy is skiddish of mushrooms so may have to do some subbing of variety but this really sounds wonderful.
