Ingredients
  • 400 g fillet of deer
  • 1 tea-cup of semen stockel mushrooms or...just fresh ceps
  • 1 g dried porcini mushrooms (soaked in black tea)
  • 4 tbsp sugar
  • 15 g butter
  • 2 glasses of dry red wine
  • some fresh marjoram
  • some fresh rosemary
  • salt
  • pepper
  • olive oil

Directions
  1. Soak the mushrooms in black tea for about an hour.
  2. Heat a frying pan, put olive oil, add sugar and wait till it melts.
  3. Then sautee fresh mushrooms, stir and add the soaked porcini. Sprinkle with wine and wait till the alcohol evaporates and the sauce is caramelled (for 10 minutes approximately).
  4. Add some butter, and once it melts, salt and pepper the mushrooms.
  5. They're ready for serving.
  6. Salt and pepper the fillet.
  7. Put a second frying pan on the heat and prepare for the next steps. Put some olive oil and sautee the fillet along with marjoram and rosemary on all the sides (about 3 minutes for each side).
  8. If you want the meat well-roasted, continue for 3 more minutes. Serve what you've cooked and eat with company.

Mr Breezy is skiddish of mushrooms so may have to do some subbing of variety but this really sounds wonderful.
