PEPPERCORN RIB EYE STEAK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parsons Estate in Kaufman, Texas in 1994.

Ingredients
  • 1/8 cup whole mixed peppercorns
  • 4 thick filet mignons
  • 1/2 teaspoon salt
  • 1/4 cup red wine

Directions
  1. Crush peppercorns by pressing them against a flat surface with bottom of a heavy pot.
  2. Cover the steaks with the crushed peppercorns pressing them into the steak firmly.
  3. Season with salt and grill or broil until cooked to desired degree.
  4. Deglaze pan with wine reducing liquid and stirring up brown bits in pan.
  5. Spoon over steaks and serve immediately.
