Splendid Elegant Eggs

SPLENDID ELEGANT EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mabry Estate in Canton, Texas in 1989.
Ingredients
- 8 slices bread crusts removed cooked in butter shopping list
- 20 ounces chopped spinach cooked and drained shopping list
- 1 cup sour cream shopping list
- 1/2 cup chopped onion cooked in butter shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 1/4 teaspoon nutmeg shopping list
- 2 tablespoons Madeira shopping list
- 8 eggs poached in water with 1/2 teaspoon tarragon vinegar shopping list
- 1/2 cup fine dry bread crumbs shopping list
- 1/2 cup grated parmesan cheese shopping list
- Sauce: shopping list
- 3 egg yolks shopping list
- 2 tablespoons fresh squeezed lemon juice shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1 cup lightly salted butter melted shopping list
How to make it
- Preheat broiler then lightly butter 2 baking sheets and place bread on sheets.
- Puree spinach, sour cream, onion, salt, pepper, nutmeg and Madeira.
- Spread mixture over bread slices then top with poached eggs.
- For sauce combine yolks with lemon juice and cayenne pepper in blender.
- With blender running slowly drizzle in hot butter then fold breadcrumbs and cheese into sauce.
- Top each egg with spoonfuls of sauce then broil 5 minutes.
