SPLENDID ELEGANT EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mabry Estate in Canton, Texas in 1989.

Ingredients
  • 8 slices bread crusts removed cooked in butter
  • 20 ounces chopped spinach cooked and drained
  • 1 cup sour cream
  • 1/2 cup chopped onion cooked in butter
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons Madeira
  • 8 eggs poached in water with 1/2 teaspoon tarragon vinegar
  • 1/2 cup fine dry bread crumbs
  • 1/2 cup grated parmesan cheese
  • Sauce:
  • 3 egg yolks
  • 2 tablespoons fresh squeezed lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1 cup lightly salted butter melted

Directions
  1. Preheat broiler then lightly butter 2 baking sheets and place bread on sheets.
  2. Puree spinach, sour cream, onion, salt, pepper, nutmeg and Madeira.
  3. Spread mixture over bread slices then top with poached eggs.
  4. For sauce combine yolks with lemon juice and cayenne pepper in blender.
  5. With blender running slowly drizzle in hot butter then fold breadcrumbs and cheese into sauce.
  6. Top each egg with spoonfuls of sauce then broil 5 minutes.
