How to make it

  • Cook onion, zucchini and peppers with salt and black pepper to taste in 1 tablespoon of the oil.
  • Cook stirring occasionally for 10 minutes.
  • Whisk eggs, 1/3 cup parmesan and parsley then add vegetable mixture and stir until combined.
  • In skillet heat remaining oil over moderate heat until hot but not smoking and pour in eggs.
  • Distribute vegetables evenly and cook without stirring for 10 minutes.
  • Sprinkle remaining parmesan over top and broil under preheated broiler 4” from heat 4 minutes.
  • Let cool in skillet 5 minutes then run knife around edge.
  • Slide frittata on serving plate and cut into wedges then serve warm or at room temperature.
