ZITI AND PARMESAN OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Inman Estate in Mineral Wells, Texas in 1990.

Ingredients
  • 3 large eggs separated
  • 1 dash hot pepper sauce
  • 1 tablespoon Creole seasoning
  • 2 tablespoons canned artichoke hearts chopped
  • 2 tablespoons unsalted butter
  • 1 cup cooked ziti
  • 1 tablespoon chopped fresh flat leaf parsley
  • 1/4 cup grated parmesan cheese

Directions
  1. Preheat broiler then in bowl beat egg yolks, hot pepper sauce and Creole seasoning.
  2. In another bowl beat egg whites to soft peaks.
  3. Fold yolks into whites then add artichoke hearts then melt butter in frying pan.
  4. When butter foams add egg mixture and sprinkle ziti and parsley over the eggs.
  5. Top with cheese then broil 4 minutes.
