Baked And Broiled Low Carb Mac And Cheese With Leeks

- 4 tablespoons unsalted butter or can use olive oil if you wish equivalent shopping list
- 1 bunch leek greens from one a half pounds of leeks thinly sliced shopping list
- salt and pepper shopping list
- 3 cups half and half or whole milk shopping list
- no flour here as this is a low carb dish shopping list
- 10 ounces manchego cheese shredded shopping list

How to make it
- Oven to 350 pre heated
- Melt your butter in a large skillet (2 tablespoons for now)
- Add the leeks and cook over high heat
- for about five minutes and season with salt and pepper
- cover on low heat till tender about 20 minutes
- 'Meanwhile in another saucepan melt the remaining butter
- Add half and half or milk and bring to a boil
- Again, I am not adding flour
- remove from the heat
- and then add two cups of cheese and whish the cheese sauce till melted
- In a large saucepan of salted water when boiled add the macaroni until nearly aldente
- Drain well. Add the macaroni and cheese sauce to the leek greensand stir until combined
- Transfer the macaroni to an 8 by 11 inch baking dish and sprinkle with remaining 1/2 cup cheese
- BAke for about 40 mintes till bubbling
- Now
- Turn the broiler on and broil the mac and cheese till golden brown on top for about three minutes.
- Serve with Zinfadel wine
- The earthiness of the manchego cheese makes this makes this mac and cheese dish especially good .
- Now, for those not on low carb here's one I saw on the Iron chef.
- Take some cheddar cheese gold fishes and put them on top and bake and the mac with the cheddar crunchy goldfishes comes out really good. They made a mac and cheese and used cheddar cheese goldfishes on top for crunch. I say it again but it was on iron chef and that's what they did. Incredible but very good and they got a good score, too
