Ingredients
  • 2 lbs. of fresh shrimp. peeled, deveined, and rinsed well
  • 1 cup of extra virgin olive oil
  • 4 large vine-ripened tomatoes
  • 1 large onion, chopped fine
  • 12 cloves of garlic, crushed and chopped
  • 1/2 lb. of fresh baby green beans, cut into 1 " pieces
  • 1 cup of fresh basil leaves, rinsed and chopped
  • 1 large lemon
  • Sea salt to taste
  • Steak seasoning to taste
  • Ground Bay leaves - 2 tblsp.
  • Italian Grating Cheese to sprinkle on top when it's ready to serve.

Directions
  1. Combine shrimp in large bowl with garlic, green beans, onion
  2. Use veggie peeler to skin tomatoes
  3. Squeeze excess water out of tomatoes, chop into small pieces
  4. Add tomatoes to bowl
  5. Add basil.
  6. Drench it all in at least 1/2 cup of extra virgin olive oil
  7. (it seems like a lot, but it's good for you and it really isn't too much)
  8. Add Steak seasoning, ground bay leaves, and sea salt to taste.
  9. Stir it up for several minutes to make sure that you have coated everything very well in the oil and seasoning mixture.
  10. Put it in the fridge to marinate and forget about it until about 1 hour and a half before you want to serve dinner.
  11. Then:
  12. Squeeze the juice out of one very large lemon or 2 small ones.
  13. Combine in a mixing bowl with the other 1/2 cup of olive oil
  14. Use mixer to whip lemon and oil with sugar and 1 large basil leaf
  15. Pour over marinating shrimp and veggies. Mix well.
  16. Let everything marinate another 30 minutes.
  17. Then saute until shrimp are golden brown.
  18. Sprinkle lightly with your favorite Italian grating cheese and serve over noodles or rice.

That's making my mouth water - shrimp is a favorite of mine. This sounds like it is full of great flavors...will have to try this next time I can find good, fresh shrimp. Thank you!
