Beef Holland Style Recipe
BEEF HOLLAND STYLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marlin Estate in Heath, Texas in 1998.

Ingredients
  • 2 pounds beef cutlets trimmed of all fat and gristle
  • 1/4 cup butter
  • 2 shallots finely chopped
  • 1/4 cup brandy
  • 1/4 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-1/2 cups dry white wine
  • 1 cup heavy cream
  • Chopped parsley for garnish

Directions
  1. Cut beef into strips then heat butter in large skillet and sauté onions 3 minutes.
  2. Add beef and sauté for 2 minutes then add brandy and cook 2 minutes.
  3. Sprinkle with the flour, salt and pepper then stir to combine.
  4. Add wine and cream then cook over low stirring constantly until mixture thickens but not boils.
  5. Serve immediately garnished with chopped parsley.
