Rhubarb and Coconut Cake

- 350 g rhubarb (peeled and sliced small ) shopping list
- 225 g flour shopping list
- 1 Tbs additional flour shopping list
- 150 butter ( softened at room temp ) shopping list
- 125 g sugar shopping list
- 1 pkg vanilla sugar or 1 tsp vanilla shopping list
- Pinch of salt shopping list
- 4 eggs shopping list
- 100 g shredded sweetened coconut shopping list
- 3 tsp baking powder shopping list
- 5 Tbs milk shopping list
How to make it
- Slice rhubarb combine with 1 tablespoon flour to mix.
- Cream softened butter with sugar and vanilla
- Beat in the eggs one at a time
- Combine the flour, salt, baking powder and coconut
- Add flour and milk alternately to the creamed mixture
- Fold in the rhubarb
- Grease a flower shaped cake pan or springform pan and sprinkle with some fine breadcrumbs
- Add the batter to the pan
- Bake in a 150C ( convection ) to 175C oven about one hour or tested done
- Let cool in pan 15 minutes
- May dust cooled cake with powder sugar or add an icing of choice
