Roasted Pork Tenderloin With Chimichurri Sauce Recipe
Chimichurri isn't just for flank steak, it works equally well on cumin rubbed roasted pork tenderloin. Very good with roasted potatoes as the side dish...chimchurri is good on hot potatoes too!

Ingredients
  • 2 pork tenderloins (they come packed in pairs at my grocer)
  • 1 tsp of granulated garlic
  • 1/2 tsp of smoked paprika
  • 1/2 tsp of cumin
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • some olive oil-about two tbsps.
  • Sauce
  • 1/4 cup of olive oil
  • 2/3 cup of sherry vinegar (if you don't have sherry vinegar, you can sub 1/2 cup of red wine vinegar with 2 tbsp of dry sherry added)
  • 1 cup of parsley, stems removed
  • 1 bunch of green onions, with the green tops
  • 1 tsp of dried oregano
  • 1 lemon juiced, about 3 tbsp.
  • 6 cloves of garlic
  • 1 pinch of red pepper flakes
  • salt and pepper
  • Potatoes
  • 6 russets, scrubbed peeled, cut in one inch chunks
  • 1/4 cup of oil
  • 1 tbsp of kosher salt
  • 1/2 tsp of ground black pepper
  • 1 tsp of chili powder
  • 1/2 tsp of cumin powder
  • foil lined baking sheet

Directions
  1. Preheat oven to 400 degrees.
  2. Prep potatoes first since they take the longest.
  3. Toss the potatoes with the oil, salt, pepper, cumin and chili powder.
  4. Place on foil lined baking sheet in a single layer and start roasting.
  5. Total time in oven for potatoes about 40.
  6. Next, pat the pork tenderloins dry, and remove any silver skin or fat from the tenderloins.
  7. Mix the granulated garlic, smoked paprika, cumin, salt and pepper with some oil and rub over the tenderloins.
  8. Let sit about 10 minutes room temperature.
  9. Heat your cast iron skillet.
  10. Brown the tenderloins about a minute or two per side.
  11. When brown, put the tenderloins in the hot oven with the potatoes and roast for 20 minutes for medium/med-well.
  12. While the pork tenderloin and potatoes roast, make your chimichurri sauce.
  13. Blend all the sauce ingredients in your blender (coarsely cut the green onions before you blend them so they don't clog up the blender-take it from me...you want a sauce-not strings of onion). Allow it to sit at room temperature. If it seems too thick to be a sauce, add a bit more oil.
  14. Pull pork from oven, let it rest at least five minutes.
  15. Slice and serve with potatoes and drizzle chimichurri over all.
  16. White wine sangria is a lovely drink to have with this dinner.

What is chimichurri?


I made a pan steak for a wine party and added a chimicurri sauce on top. It was a hit and I eat it on everything now. I like it on pasta, bread, steak, chicken, pork, shrimp, salad, tomaotes...the list is endless. The only thing I have not been seen eating it on are sweets.
