Roasted Red Onion and Pear Salad

- 2Tbs orange juice shopping list
- 1Tbs lemon juice shopping list
- 1tsp Dijon mustard shopping list
- 1tsp honey shopping list
- 1/4tsp chopped fresh thyme leaves shopping list
- 6Tbs vegetable oil or olive oil shopping list
- salt and ground black pepper shopping list
- 1 red onion,cut in 1" wedges,with root end intact shopping list
- 1 head bibb lettuce shopping list
- 1(6oz) bag baby spinach(about 8 cups) shopping list
- 1 ripe pear,cored and cut in 1" chunks shopping list
- 1/2c crumbled goat cheese shopping list
- 1c smokehouse almonds,chopped coarse shopping list
- 1/4c dried cranberries shopping list
How to make it
- Adjust oven rack to middle position and heat to 400.
- Whisk orange and lemon juices,mustard,honey and thyme together in med. bowl. Gradually whisk in 4 Tbs oil. Season with salt and pepper.
- Toss onion wedges with remaining 2 Tbs oil,1/4tsp salt and 1/4tsp pepper. Transfer to baking sheet and roast until brown and soft,25 mins,flipping wedges halfway through cooking. Cool 15 mins.
- Divide Bibb lettuce leaves among salad plates. Toss spinach with 1/4c dressing in large bowl. Divide spinach among plates. Arrange roasted onions,pear,goat cheese,almonds and cranberries on top.
- Drizzle with remaining dressing and serve.

This has my name written all over it....how wonderful, pears, onions, goat cheese, almonds and then Cranberries. The dressing marinade is just one of my favorite flavor combos ever. Yummy.
