This came to me from a friend who was a vegetarian. My family is not but we love this soup. How easy is 5 ingredients!

Ingredients
  • 1 large can (46 oz.) tomato juice
  • 2 cans Del Monte “Fresh Cut” diced tomatoes, Italian style
  • 2-3 Tbsp. Italian seasoning
  • 3-4 Tbsp. fresh basil, finely snipped
  • 2 cups lite sour cream

Directions
  1. Combine first 4 ingredients and simmer. Flavors will improve with additional slow cooking. Remove from heat and whisk in sour cream. Delicious served hot or cold! If you delete sour cream and garnish with grated cheese and various pizza toppings- you have pizza soup! Kids love it!
