Parmesan Parsnips

- 30g grated Parmesan shopping list
- 1lb parsnips shopping list
- 85g plain flour shopping list
- duck fat shopping list
- garlic cloves shopping list
- salt and pepper shopping list
How to make it
- Peel, halve, cut out stalky centres and cut into bite size pieces
- parboil
- meanwhile heat duck fat in roasting pan in oven
- put flour, parmesan, salt and pepper in to a bowl and mix
- strain parsnips and coat generously with flour mix
- coat well with duck fat
- add garlic
- and bake for an hour basting at least twice
- once they are crispy and brown
- squeeze garlic and serve hot
