How to make it

  • Peel, halve, cut out stalky centres and cut into bite size pieces
  • parboil
  • meanwhile heat duck fat in roasting pan in oven
  • put flour, parmesan, salt and pepper in to a bowl and mix
  • strain parsnips and coat generously with flour mix
  • coat well with duck fat
  • add garlic
  • and bake for an hour basting at least twice
  • once they are crispy and brown
  • squeeze garlic and serve hot
