Ingredients

1 cup plus 1 Tablespoon of Bisquick baking mix

4 eggs

1/2 teaspoon oregano

1 Tablespoon parsley

1/4 teaspoon salt

1/2 cup grated Parmesan cheese

1/2 cup shredded Swiss cheese

1/2 cup salad oil

1/2 teaspoon melted butter

1/8 teaspoon pepper

3 cups grated zucchini

1 small grated onion

1 cup grated carrots

Directions

Combine all ingredients except zucchini, onion, and carrots together. After combined, add the three remaining ingredients. Mix together and put in buttered baking dish. Bake for about 30 minutes.
