Spinach Stuffed Meatloaf Recipe
SPINACH STUFFED MEATLOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Omega Estate in Tulsa, Oklahoma in 1994.

Ingredients
  • 1 pound lean ground beef
  • 1/2 pound ground pork
  • 3 garlic cloves crushed
  • 1/4 cup plain bread crumbs
  • 1/4 cup parmesan cheese
  • 1 egg
  • 10 ounce package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup minced onion
  • 1 egg
  • 1/4 cup Italian bread crumbs
  • 1 cup cheddar cheese shredded
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Mix beef, pork, garlic, bread crumbs, parmesan cheese and 1 whole egg.
  2. On a piece of waxed paper pat meat mixture into a rectangle.
  3. Mix spinach, onion, egg, bread crumbs, cheese, salt and pepper.
  4. Spread over patted meat mixture then starting at narrow end roll meatloaf up in jelly roll fashion.
  5. Place in loaf pan and bake at 400 for 1 hour.
