Spinach Stuffed Meatloaf

SPINACH STUFFED MEATLOAF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Omega Estate in Tulsa, Oklahoma in 1994.
Ingredients
- 1 pound lean ground beef shopping list
- 1/2 pound ground pork shopping list
- 3 garlic cloves crushed shopping list
- 1/4 cup plain bread crumbs shopping list
- 1/4 cup parmesan cheese shopping list
- 1 egg shopping list
- 10 ounce package frozen chopped spinach, thawed and squeezed dry shopping list
- 1/4 cup minced onion shopping list
- 1 egg shopping list
- 1/4 cup Italian bread crumbs shopping list
- 1 cup cheddar cheese shredded shopping list
- 1/8 teaspoon kosher salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- Mix beef, pork, garlic, bread crumbs, parmesan cheese and 1 whole egg.
- On a piece of waxed paper pat meat mixture into a rectangle.
- Mix spinach, onion, egg, bread crumbs, cheese, salt and pepper.
- Spread over patted meat mixture then starting at narrow end roll meatloaf up in jelly roll fashion.
- Place in loaf pan and bake at 400 for 1 hour.
