Spicy Rib Roast With Black Bean Salsa Recipe
SPICY RIB ROAST WITH BLACK BEAN SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gregg Estate in Fort Worth, Texas in 1980.

Ingredients
  • 10 pound beef rib roast bone in fat trimmed to 1/8” thick
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt
  • 1 teaspoon ground red pepper
  • 1 can black beans drained and rinsed
  • 1 medium tomato chopped
  • 1 small red onion
  • 3 tablespoons fresh cilantro chopped

Directions
  1. Preheat oven to 325 then mix chili powder, cumin, salt and red pepper.
  2. Reserve 2 teaspoons for salsa then rub roast with remaining seasoning.
  3. Cook roast bone side down for 3 hours.
  4. Meanwhile combine black beans, tomato, onion, cilantro and reserved seasoning.
  5. Remove roast when temperature reaches 150ºF for medium doneness.
  6. Let roast stand tented with foil for 15 minutes before carving then serve with black bean salsa.
