Garlic Caper Olive Sauce Over Spaghetti Recipe
GARLIC CAPER OLIVE SAUCE OVER SPAGHETTI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wetzel Estate in Plano, Texas in 1982.

Ingredients
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 35 ounce can Italian plum tomatoes roughly chopped with juice reserved
  • 1 tablespoon capers well rinsed
  • 2/3 cup oil cured black olives pitted and roughly chopped
  • 1/2 teaspoon hot red pepper flakes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 pound spaghetti
  • 2 tablespoons minced flat leaf parsley leaves stripped from stems

Directions
  1. Heat oil in heavy pan over medium heat then add garlic and stir.
  2. Remove from heat and allow hot oil to turn garlic to pale gold approximately 10 minutes.
  3. Stir in tomatoes, capers, olives, pepper flakes, basil, oregano and black pepper.
  4. Return to medium low heat and simmer 10 minutes then reduce heat to very low.
  5. Cook pasta in rapidly boiling salted water until al dente then drain well.
  6. Toss pasta with sauce and sprinkle on fresh parsley and serve.
