Caprese Chicken Salad Recipe
Tomatoes, basil & mozzarella (Insalata Caprese - my fave salad), paired with chicken for a tasty summer dish. Use the freshest ingredients.

Ingredients
  • 3 large plum tomatoes -- cored, seeds squeezed out, and diced
  • 6 ounces mozzarella cheese -- fresh, cut into small cubes
  • 5 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons fresh basil -- chopped
  • 1/2 cup flour
  • 2 eggs
  • 1/2 cup bread crumbs
  • 4 boneless skinless chicken breast halves -- (about 1-1/2 pounds total)
  • basil for garnish

Directions
  1. Combine tomatoes, mozzarella, 2 tablespoons olive oil, balsamic vinegar, 1/4 teaspoon salt, 1/8 teaspoon pepper and chopped basil for the salad.
  2. Place flour on a large plate. Lightly beat eggs in a bowl. Spread bread crumbs on a plate. Dip chicken in flour, egg and bread crumbs, pressing to adhere. Sprinkle both sides with remaining salt and pepper.
  3. Heat remaining 3 tablespoons oil in a large skillet . Add chicken and cook about 5 minutes per side or until internal temperature reads 160F.
  4. Spoon an equal amount of salad over each piece of chicken. Garnish with additional basil. Serve with garlic bread
