Falafel With Yogurt Tahini Sauces Recipe
A quick easy vegan dish that can be made in advance. Or add an egg and serve in pita bread for a vegetarian meal.

Ingredients
  • Falafel
  • One large can of garbanzo beans (chickpeas)
  • 1 tablespoon roasted garlic
  • One small jar of roasted red peppers
  • 1 tablespoon cumin
  • ½ cup fresh bread crumbs
  • ½ cup chopped onion
  • ¼ cup fresh parsley or dry equivalent
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • 2 tablespoons fresh cilantro or dry equivalent
  • One organic egg, if you’re not strictly vegan
  • Yogurt Sauce
  • 1/2 cup tahini
  • ½ - ¾ cup homemade soy yogurt
  • The juice of one lime
  • 1 teaspoon roasted garlic
  • Wasabi to taste (we use about a tablespoon)

Directions
  1. Falafel
  2. Place all ingredients in a food processor and process until smooth.
  3. Allow the mixture to chill for at least one hour.
  4. Form patties or hot dog shapes and flatten them.
  5. Brown in a frying pan in a small amount of olive oil.
  6. Serve in vegan wraps or pita bread with salad and yogurt sauce (recipe below).
  7. Yogurt Sauce
  8. Place all ingredients in a food processor and process until smooth.
