How to make it

  • Cake:
  • Sift first three ingredients together in a separate bowl
  • Beat eggs in mixing bowl with mixer on high speed until thick
  • Add sugar gradually, beting well after each addition
  • Stir in vanilla extract
  • Gently fold in the flour mixture just until blended
  • Spread evenly in buttered 10"x15" jelly roll pan lined with buttered and floured waxed paper
  • Bake at 375 degrees for 8-10 minutes
  • Remove cake from oven and turn out onto a tea towel sprinkled liberally with powdered sugar
  • Peel waxed paper off the bottom of the cake
  • Roll up the cake in the towel as for jelly roll (start rolling from the 15" side of the cake, your towel will roll right along with the cake)
  • Let stand for 20 minutes to cool
  • Filling:
  • Soften gelatin in 1/4 cup water in saucepan
  • Cook over low heat until dissolved, stirring constantly; cool
  • Fold cooled gelatin and powdered sugar into whipped cream
  • Chill covered for 5-10 minutes
  • Unroll cake and spread with filling
  • Spoon 3/4 cup sliced fresh strawberries over the top
  • Roll up cake, removing towel
  • Chill for 1 hour or longer
  • Top with remaining whipped cream and whole strawberries

    I just printed this recipe as I want to make something new for a picnic we are having at our home in 3 weeks. This reminds me of a Jelly Roll my Mom used to make. Thanks for sharing!!
