How to make it

  • Preheat oven to 400
  • In large mixing bowl, combine cereals and boiling water
  • Let stand for 5 minutes
  • In mixing bowl, combine flour, sugar, baking soda and salt
  • In another bowl, combine eggs, buttermilk and oil
  • Stir in cereal and wet ingredients to dry ingredients and stir until just blended
  • Fold in dates, raisins and walnuts
  • Fill paper lined muffin tins 2/3 full
  • Bake 15-20 minutes or until toothpick comes out clean
  • Cool 5 minutes before removing to cooling rack
