Ingredients
  • 2 cups All Bran cereal
  • 1 cup crushed Shredded Wheat
  • 1 cup boiling water
  • 2 1/2 cups flour
  • 2 cups sugar
  • 2 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/2 cup vegetable oil (I used canola)
  • 1 cup chopped dates
  • 1 cup raisins
  • 1 cup chopped walnuts

Directions
  1. Preheat oven to 400
  2. In large mixing bowl, combine cereals and boiling water
  3. Let stand for 5 minutes
  4. In mixing bowl, combine flour, sugar, baking soda and salt
  5. In another bowl, combine eggs, buttermilk and oil
  6. Stir in cereal and wet ingredients to dry ingredients and stir until just blended
  7. Fold in dates, raisins and walnuts
  8. Fill paper lined muffin tins 2/3 full
  9. Bake 15-20 minutes or until toothpick comes out clean
  10. Cool 5 minutes before removing to cooling rack
