QUICK PEACH CHUTNEY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Zimmerman Estate in Terrell, Texas in 1989.

Ingredients
  • 2 cans sliced peaches in juice with juice reserved
  • 1/4 cup plus 1 tablespoon white wine vinegar
  • 1/4 cup granulated sugar
  • 1/2 cup white onion finely chopped
  • 1 small jalapeno stemmed seeded and finely chopped
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup golden raisins

Directions
  1. Drain peaches and reserve 1/4 cup juice and set aside.
  2. In medium saucepan combine vinegar, sugar, onion and jalapeno.
  3. Stir over medium low heat 3 minutes then process peaches to coarse puree in food processor.
  4. Add to saucepan with the 1/4 cup reserved peach juice, cumin, turmeric, cinnamon and raisins.
  5. Bring to a boil then reduce heat and simmer 20 minutes stirring often.
  6. Transfer chutney to a bowl then serve warm or at room temperature.
