Crab Toasts

- 1 loaf(16oz) French bread shopping list
- 1/4c butter,cubed shopping list
- 4 plum tomatoes,peeled and finely chopped,divided shopping list
- 1 jalapeno pepper,seeded and chopped shopping list
- 2 garlic cloves,minced shopping list
- 2tsp minced fresh cilantro shopping list
- 2 pkgs(8oz ea) imitation crabmeat or 2 cans crabmeat shopping list
- 3/4c ricotta cheese shopping list
- 1/2c sour cream shopping list
- 2c(8oz)shredded Italian cheese blend,divided shopping list
How to make it
- Cut bread in half horizontally;hollow out top and bottom,leaving 1" shells. Crumble removed bread;set aside.
- In large skillet,melt butter over med. heat;add half of the tomatoes. Add the jalapeno,garlic ,cilantro;cook and stir 4 mins. Remove from heat.
- In large bowl,combine crab,ricotta and sour cream. Stir in the tomato mixture;reserved bread crumbs and 1 cup cheese blend.Spoon into bread shells. Place on ungreased baking sheet.
- Bake 375 for 15 mins. Top with remaining cheese blend and tomatoes. Bake 5 to 7 mins longer or till cheese is melted.
- If you want to use these for appetizers,slice thinner.
