Crab Toasts Recipe

Ingredients

1 loaf(16oz) french bread

1/4c butter,cubed

4 plum tomatoes,peeled and finely chopped,divided

1 jalapeno pepper,seeded and chopped

2 garlic cloves,minced

2tsp minced fresh cilantro

2 pkgs(8oz ea) imitation crabmeat or 2 cans crabmeat

3/4c ricotta cheese

1/2c sour cream

2c(8oz)shredded Italian cheese blend,divided

Directions

Cut bread in half horizontally;hollow out top and bottom,leaving 1" shells. Crumble removed bread;set aside.

In large skillet,melt butter over med. heat;add half of the tomatoes. Add the jalapeno,garlic ,cilantro;cook and stir 4 mins. Remove from heat.

In large bowl,combine crab,ricotta and sour cream. Stir in the tomato mixture;reserved bread crumbs and 1 cup cheese blend.Spoon into bread shells. Place on ungreased baking sheet.

Bake 375 for 15 mins. Top with remaining cheese blend and tomatoes. Bake 5 to 7 mins longer or till cheese is melted.

If you want to use these for appetizers,slice thinner.
