Ingredients
  • 4 c. of chopped zucchini
  • 6 c. of vegetable stock
  • 1 pinch cayenne pepper
  • 1 c. of chopped fresh spinach
  • 1/2 minced red bell pepper
  • 3 tbps. of olive oil
  • 1 chopped onion
  • 2 stalks of chopped celery
  • 4 cloves of minced garlic
  • 2 tbsp. of minced fresh ginger root
  • 1 tbsp. of turbinado sugar
  • 2 tsp. of sea salt
  • 1/4 tsp. of ground turmeric
  • 1/4 tsp. of ground allspice
  • 1/4 tsp. of ground nutmeg
  • 2 peeled and diced potatoes

Directions
  1. Add oil to large pot over medium flame.
  2. Saute onion, celery, garlic, ginger, and sugar.
  3. Cook this for approx. 5 min until tender.
  4. Now add the salt, tumeric, allspice, and the nutmeg.
  5. Then add in the potatoes and zuchini, and chicken stock.
  6. Let this come over the medium flame to a full boil, then reduce the flame to low.
  7. Remove completely from heat and add cayenne pepper.
  8. Now use a blender to puree soup. Ladle into bowls.
  9. Use red pepper slices as a garnish!
