Jamaican Spinach Soup

- 4 c. of chopped zucchini shopping list
- 6 c. of vegetable stock shopping list
- 1 pinch cayenne pepper shopping list
- 1 c. of chopped fresh spinach shopping list
- 1/2 minced red bell pepper shopping list
- 3 tbps. of olive oil shopping list
- 1 chopped onion shopping list
- 2 stalks of chopped celery shopping list
- 4 cloves of minced garlic shopping list
- 2 tbsp. of minced fresh ginger root shopping list
- 1 tbsp. of turbinado sugar shopping list
- 2 tsp. of sea salt shopping list
- 1/4 tsp. of ground turmeric shopping list
- 1/4 tsp. of ground allspice shopping list
- 1/4 tsp. of ground nutmeg shopping list
- 2 peeled and diced potatoes shopping list
How to make it
- Add oil to large pot over medium flame.
- Saute onion, celery, garlic, ginger, and sugar.
- Cook this for approx. 5 min until tender.
- Now add the salt, tumeric, allspice, and the nutmeg.
- Then add in the potatoes and zuchini, and chicken stock.
- Let this come over the medium flame to a full boil, then reduce the flame to low.
- Remove completely from heat and add cayenne pepper.
- Now use a blender to puree soup. Ladle into bowls.
- Use red pepper slices as a garnish!
