easy tortilla soup

- 1 med/med large onion - chopped shopping list
- 3 gloves garlic - crushed or minced shopping list
- 3/4 c celery shopping list
- 1 large jar (16 oz give or take) black bean/corm salsa shopping list
- 6 - 8 cups chicken broth (I usually make this after we smoke a chicken) shopping list
- 1 small can tomato paste or pure (6-8 oz) shopping list
- 1 T cumin (more or less to taste) shopping list
- 2.5 tsp worchestershire sauce shopping list
- 2 small bags of frozen corn (we like the supersweet steam-in-the bag corn) or one standard size box of frozen corn or 2-3 cups fresh corn shopping list
- one chicken, boned and shredded or cut into soup- appropriate pieces shopping list
- red pepper to taste shopping list
- salt to taste (we use hickory smoked sea salt) shopping list
- Toppings shopping list
- shredded cheese of choice (we like jack, pepper jack or mexican blend) shopping list
- sour cream shopping list
- tortilla strips or chips shopping list
- avocado shopping list
How to make it
- make, thaw or open chicken stock and place in stock pot
- saute garlic, celery, and chopped onion in a little olive oil or butter until onion starts to become transparent
- add saute mix to stock pot
- add other ingredients (not toppings) and bring to a slow boil
- reduce heat and simmer 30-45 minutes
- ladle into bowls and top as desired
