Ingredients
  • 1 med/med large onion - chopped
  • 3 gloves garlic - crushed or minced
  • 3/4 c celery
  • 1 large jar (16 oz give or take) black bean/corm salsa
  • 6 - 8 cups chicken broth (I usually make this after we smoke a chicken)
  • 1 small can tomato paste or pure (6-8 oz)
  • 1 T cumin (more or less to taste)
  • 2.5 tsp worchestershire sauce
  • 2 small bags of frozen corn (we like the supersweet steam-in-the bag corn) or one standard size box of frozen corn or 2-3 cups fresh corn
  • one chicken, boned and shredded or cut into soup- appropriate pieces
  • red pepper to taste
  • salt to taste (we use hickory smoked sea salt)
  • Toppings
  • shredded cheese of choice (we like jack, pepper jack or mexican blend)
  • sour cream
  • tortilla strips or chips
  • avocado

Directions
  1. make, thaw or open chicken stock and place in stock pot
  2. saute garlic, celery, and chopped onion in a little olive oil or butter until onion starts to become transparent
  3. add saute mix to stock pot
  4. add other ingredients (not toppings) and bring to a slow boil
  5. reduce heat and simmer 30-45 minutes
  6. ladle into bowls and top as desired
