Turkey And Parsnip Curry

- 2 tablespoons vegetable oil shopping list
- 2 onions, halved and thinly sliced shopping list
- 500g (a couple of ounces over a pound) parsnips, peeled and cut into chunks shopping list
- 5 tablespoons Korma paste (we use Patak's). I reckon you could use any curry paste you like but this goes well with the coconut milk. shopping list
- 1 14 oz. can chopped tomatoes shopping list
- 1 14oz. can coconut milk shopping list
- 500g cooked turkey (again, a little over a pound) shopping list
- Any other vegetables or pulses you have and wish to use up! shopping list
How to make it
- In a saucepan, heat the oil.
- Add the onions. Fry gently for 10 minutes until they are softened and lightly coloured.
- Add the parsnips. Stir well.
- Stir in the Korma paste, the tomatoes and the coconut milk.
- Bring to the boil. Reduce the heat, cover and simmer for about 25 minutes, or until the parsnips are tender.
- Stir in the cooked turkey.
- Cover the pan and simmer for a further 5 minutes until the meat is heated through.
- You can add other vegetables and pulses (cooked) to your taste but this is just grand as it is.
