How to make it

  • In a saucepan, heat the oil.
  • Add the onions. Fry gently for 10 minutes until they are softened and lightly coloured.
  • Add the parsnips. Stir well.
  • Stir in the Korma paste, the tomatoes and the coconut milk.
  • Bring to the boil. Reduce the heat, cover and simmer for about 25 minutes, or until the parsnips are tender.
  • Stir in the cooked turkey.
  • Cover the pan and simmer for a further 5 minutes until the meat is heated through.
  • You can add other vegetables and pulses (cooked) to your taste but this is just grand as it is.

    Hey, how did I miss this?! Sounds delicious, and I was wondering what I was going to do with the parsnips I just bought! I'll make this one next weekend, when my husband & I go RVing BY OURSELVES (yay!), since the children probably wouldn't appreciate this.
