  • 2 tablespoons vegetable oil
  • 2 onions, halved and thinly sliced
  • 500g (a couple of ounces over a pound) parsnips, peeled and cut into chunks
  • 5 tablespoons Korma paste (we use Patak's). I reckon you could use any curry paste you like but this goes well with the coconut milk.
  • 1 14 oz. can chopped tomatoes
  • 1 14oz. can coconut milk
  • 500g cooked turkey (again, a little over a pound)
  • Any other vegetables or pulses you have and wish to use up!

Directions
  1. In a saucepan, heat the oil.
  2. Add the onions. Fry gently for 10 minutes until they are softened and lightly coloured.
  3. Add the parsnips. Stir well.
  4. Stir in the Korma paste, the tomatoes and the coconut milk.
  5. Bring to the boil. Reduce the heat, cover and simmer for about 25 minutes, or until the parsnips are tender.
  6. Stir in the cooked turkey.
  7. Cover the pan and simmer for a further 5 minutes until the meat is heated through.
  8. You can add other vegetables and pulses (cooked) to your taste but this is just grand as it is.

Hey, how did I miss this?! Sounds delicious, and I was wondering what I was going to do with the parsnips I just bought! I'll make this one next weekend, when my husband & I go RVing BY OURSELVES (yay!), since the children probably wouldn't appreciate this.
