Ingredients
  • Salad:
  • 1/2 head romaine lettuce, rinsed patted dry, and torn into small pieces
  • 1/2 head red lettuce, rinsed patted dry, and torn into small pieces
  • 1/2 cup red seedless grapes
  • 2 tablespoons freshly grated parmesan cheese
  • 3/4 cup Homemade croutons
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • Dressing:
  • 1 2-ounce can anchovies in oil
  • 1 1/2 tablespoons fresh, minced garlic
  • 1/4 cup Dijon mustard
  • 1 1/2 tablespoons fresh cracked black pepper
  • 2 tablespoon dried oregano
  • 1/2 teaspoon salt
  • 3/8 cup red wine vinegar
  • 2 cups olive oil

Directions
  1. Salad
  2. Combine ingredients in a large salad bowl and toss with approximately 1/2 cup Eggless Caesar Dressing

  4. Dressing:
  5. In food Processor, Puree anchovies with their oil to form a smooth paste
  6. Add garli, mustard, pepper oregano and salt. Process until blended
  7. With processor running add the vinegar slowly in a thin stream.
  8. With the processor still running add the oil slowly in a thin stream. Process until thorooughly blended. Dressing Should be thick and creamy.
