Turkey And Mixed Greens With Cranberry Vinaigrette Recipe
TURKEY AND MIXED GREENS WITH CRANBERRY VINAIGRETTE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Locke Estate in Carrollton, Texas in 2000.

Ingredients
  • 8 cups torn mixed salad greens
  • 3/4 pound sliced turkey or chicken cut into thin strips
  • 1 can mandarin oranges drained
  • 1/3 cup chopped fresh or frozen chives
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup vegetable oil
  • 3 tablespoons orange juice
  • 1 tablespoon balsamic vinegar or red wine vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Combine first 4 ingredients in large bowl then cover and chill.
  2. Process cranberry sauce and next 6 ingredients in blender until smooth.
  3. Drizzle over salad.
