A flavoursome chutney to serve with all meats and seafood

Ingredients
  • 3.5kg banana chillies, seeded and chopped roughly
  • 4 or 5 green mangoes, diced
  • 2 or 3 Spanish onions, diced
  • 2 cups vegetable oil
  • 2 cups sugar
  • 2 cups apple cider vinegar
  • 800g diced tomatoes (tinned is fine)
  • salt to taste

Directions
  1. Mix all ingredients in a large pot
  2. Cook on a slow to medium heat, stirring occasionally to prevent catching
  3. Sterilise glass jars and lids by placing in a 150°C oven for two hours
  4. Remove from oven using tongs to prevent contamination and place on a wooden surface so as not to break
  5. Pour the finished chutney into warm jars and seal
  6. Makes 3.6L
  7. Serving size has been calculated as 15g
