Tortilla Rolls and Spicy Mango Salsa

- 2 cups sushi rice shopping list
- 4 cups water shopping list
- 2 tablespoons cumin shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 4 medium zucchini diced shopping list
- 1 medium white onion diced shopping list
- 2 cups purple cabbage shredded shopping list
- 2 jalapeno peppers seeded and minced shopping list
- 1 tablespoon garlic minced shopping list
- 2 tablespoons olive oil shopping list
- 1 package fresh flour tortillas shopping list
- 1 bunch chives cut julienne style shopping list
- mango Salsa: shopping list
- 5 ripe mangos shopping list
- 1/4 cup scallions shopping list
- 1/4 cup cilantro shopping list
- juice from 4 limes shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
How to make it
- In medium pot add rice and water then cook covered on high flame until boiling.
- Lower flame and continue to cook covered until done approximately 25 minutes.
- Add one tablespoon cumin, salt and pepper.
- Sauté zucchini, onion, cabbage, jalapenos and garlic in large pan with olive oil.
- When vegetables become soft add remaining cumin then set mixture aside to cool.
- For salsa dice mangos, scallions and cilantro and mix together with lime juice, salt and pepper.
- To roll heat tortillas and lay on flat surface and fill halfway with layer of rice then vegetables.
- Roll tightly and tie with chives or scallion green stems and slice rolls into smaller pieces.
- Serve with mango salsa.
