TUNA NOODLE FLORENTINE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wright Estate in Seagoville, Texas in 2000.

Ingredients
  • 12 ounce package egg noodles cooked and drained
  • 20 ounces frozen chopped spinach cooked and drained
  • 14 ounces canned tuna drained
  • 4 ounces diced pimientos
  • 2 teaspoons grated onion
  • 2 cups grated sharp cheddar cheese divided

Directions
  1. Combine noodles, spinach and remaining ingredients reserving 1/2 cup of the shredded cheese.
  2. Sprinkle reserved cheese over top then cook in covered casserole at 350 until cheese is bubbly.
