Stretched 1/2lb of ground beef with 2 kinds of beans,corn,and salsa to make our scrumptious chili pie topped with cheesey mashed potatoes. From Woman's World

  • 1/2lb ground beef
  • 1pkg.(10oz) frozen corn kernals
  • 1 envelope(1.25oz) dry chili seasoning mix
  • 1 jar(16oz)mild slsa
  • 1 can(15.5oz)kidney beans,drained and rinsed
  • 1 can vegetarian (8oz) vegetarian baked beans
  • 3c instant mashed potato buds
  • 1/4c butter,cut in pieces
  • 31/2c boiling water
  • 11/2c shredded cheddar cheese,6oz.
  • 2 scallions,sliced

Directions
  1. Preheat oven to 425. Coat 2qt. baking dish with cooking spray;heat over med-high heat. Add beef;cook,stirring,until browned,5 mins. Add corn and seasoning;cook,stirring,2 mins. Add salsa,kidney beans,baked beans and 1/4c cold water;bring to boil. Reduce heat to simmer;cook 10 mins. Pour into baking dish.
  2. Place potato buds and butter in large bowl; stir in boiling water with fork. Let stand 2 mins.;stir till smooth. Stir in 1 cup cheese and scallions; carefully spread over beef mixture. Bake 15 mins,sprikling with remaining 1/2c cheese during last 3 mins.
